COOKERY
WHAT IS A COOKERY APPRENTICESHIP?
A cookery apprenticeship consists of a four year contract of training (this period is less if you have successfully completed a cookery traineeship prior) on a full time basis (i.e. you will work a minimum of 38 hours per week) with HGT as your legal employer. HGT leases you to a host employer who supervises your on the job training during your placement with them. You must realise that this is not a 9 to 5 job, and that long hours including regular weekend work will be an expectation of you. The unique aspect of an apprenticeship with HGT is that you are not placed with only one host employer for the four year contract of training. HGT enables you to gain a variety of experience, skills and training by rotating you between a number of host employers. By working under a variety of chefs you will accumulate a diversity of skills and learning experiences, as well as a range of styles of cooking and food preparation and presentation.
WHAT DO I NEED TO BECOME AN APPRENTICE CHEF?
Experience/Education: A minimum schooling level of year 11 (SACE Stage 1) must be successfully completed. Due to the nature of the industry and the commitment required to succeed, it is imperative that you have a minimum of six months industry experience. Prior experience in the industry ensures you have a thorough understanding of the demands accompanying a career in the hospitality industry. This is always the expectation of any potential host employer of a new cookery apprentice. Alternatively, Certificates 1 or 2 in Commercial Cookery are offered at TAFE Institutes such as Adelaide Institute of TAFE or Regency International Centre. These certificates offer initial training in principles and methods of cookery; extremely important should you consider applying for a cookery apprenticeship.
EMPLOYMENT OPPORTUNITIES
Once you have completed an apprenticeship in Cookery you will have attained a nationally recognised qualification of a “Qualified Cook”. Employment opportunities exist in Hotels, Restaurants, Cafes, International Hotels and Motels to Airlines and Catering Companies. The option of overseas travel also becomes a very realistic target.
PERSONAL REQUIREMENTS COOKERY APPRENTICESHIP
Are you willing to commit to the relevant contract of training and abide by the guidelines within the contract? Do you have commitment and a desire to succeed? Flexibility to work weekends, split shifts, public holidays and nights is essential. A driver’s license and access to your own transport is always a great advantage.
OFF THE JOB TRAINING
During your apprenticeship you will be required to attend and successfully complete off the job training at a nominated training provider. Off the job training is compulsory and normally you will be away from your workplace for 1-4 week blocks throughout the contract period. You will receive award wages for these periods of off the job training.
