Applicants information: Butchery

WHAT IS A BUTCHERY APPRENTICESHIP?

A butchery apprenticeship consists of a 4 year contract of training on a full time basis (i.e. you will work a minimum of 38 hours per week) with HGT as your legal employer. HGT leases you to host employers for periods of between 6 months and 2 years at a time. The rotation between host employers will enable you to gain a variation in experience and a change to enhance your training opportunities. You must realise that this is not a Monday to Friday, 9 to 5 job, and that long hours are a regular expectation, as well as weekend work.

A butchery apprenticeship is the first step towards of becoming a qualified butcher, and having a rewarding career within this industry.

WHAT DO I NEED TO BECOME AN APPRENTICE BUTCHER?

Experience/Education: A minimum schooling level of year 11 (SACE Stage 1) must be successfully completed.
Previous industry experience is desirable but not essential. A genuine interest and/or a good understanding of the meat industry is an advantage.

PERSONAL REQUIREMENTS 

You must be prepared to commit to a four year contract of training and be willing to work long hours, weekends, and public holidays. You will need to have a very high standard of personal hygiene and a interest in both the preparation and presentation of meat. You must have a strong desire to learn from others, and want to succeed in the industry.

OFF THE JOB TRAINING

During the four year apprenticeship you will be required to undertake compulsory off the job training at Regency International Centre. This is the form of 2 x 2 week blocks per year, over the first three years of the apprenticeship. The final year of the apprenticeship is spent totally "on the job".

Training includes both theory and practical modules. These include Hygiene and Sanitation, Quality Assurance, Lamb, Beef and Pork Butchery, Value Added Products, and Customer Service.

Upon successful completion of the off the job training, you will receive a Certificate 3 in Meat Processing (Meat Retailing), which is essential in becoming a fully qualified butcher.

EMPLOYMENT OPPORTUNITIES

Once you have completed the butchery apprenticeship, you will have attained a nationally recognised qualification.

Employment opportunities are many and varied. You will find opportunities to work with independent meat retailers, major supermarket chains, smallgoods manufacturers, and more.
