HGT and the LHMU have negotiated a Union Collective Agreement. The Agreement was voted on by HGT employees and it was approved by an overwhelming majority.
This means that the HGT/LHMU Collective Agreement will be operative from 1st October 2007 and applies to all HGT cookery apprentices and food and beverage trainees.
The Agreement provides two employment options for host employers: To remain on an Award based range of employment conditions:, or Elect the Alternative Rostering Arrangement option which provides the flexibility of a loaded rate of pay for normal hours.
A summary of the employment conditions contained in each option is presented below.

Employment Conditions Summary - Award based (Default Conditions)
Minimum weekly hours of 38 (full time employees).
Penalties, allowances and overtime rates apply.
38 hours to be worked in a maximum of 5 days in a working week, with the spread of hours to be no more than 11 hours inclusive of all meal breaks.
2 RDO’s per week.
Minimum of 3 hrs for each split shift.
Minimum of 4 hours and a maximum of 10 normal hours per day with a maximum of 6 hours continuous work before a break is to be provided.
Overtime rates apply after normal hours in one day on the basis that each day stands alone.
Overtime Monday – Friday, to be paid at time and a half for the first 3 hours and double-time thereafter on the basis that each day stands alone.
When an RDO is worked Monday – Friday, time and a half for the first 8 hours applies then time and three quarters for the next three hours and double time thereafter.
When an RDO is worked on a Saturday, time and a half applies to the first three hours and double time thereafter.
When an RDO is worked on a Sunday, double time applies to all hours.
All time worked on a Saturday (in ordinary time) shall be paid at the rate of time and a half. Overtime on a Saturday shall be paid at time and three quarters for the first 3 hours and double time thereafter.
Double time applies to all hours worked on Sundays.
Allowances apply for work performed outside the hours of 7 am and 7 pm
Entitlement to Public Holidays hours worked are to be paid at the rate of double time and a half.
Appendix A Summary – Alternative Rostering Arrangement
Appendix A in the HGT/LHMU Collective Agreement provides HGT with the option of using a loaded rate for permanent employees to simplify payroll, to provide flexible alternative hours of work arrangements, and to match employees’ arrangements with employers.
Prior to implementing an alternative rostering arrangement with a loaded rate of pay HGT must provide the employee with a fortnight’s notice. The same notice is required when moving from the loaded rate back to the basic rate arrangements.
The Hours of Work can be worked on a Weekly Roster or a Fortnightly Roster arrangement.
Employment Conditions Summary –Appendix A (Alternative Rostering Arrangement)
Minimum weekly hours of 38 (full time)
Loaded Hourly rate to be paid for all supplementary hours worked up to 42 hours.
Supplementary hours not to be worked on the weekend unless the bulk of the hours are worked on the Friday.
Supplementary hours must only be worked contiguous with an ordinary rostered shift immediately prior to the rostered commencement or immediately following the rostered cessation of ordinary hours.
When working a Weekly Roster, maximum 38 ordinary hours to be worked in 5 days or less in a working week. An employee may be required to work up to 4 supplementary hours per week.
When working a Fortnightly Roster, maximum 76 ordinary hours to be worked in 10 days or less. An employee may be required to work up to 8 supplementary hours per fortnight.
Spread of hours to be no more than 11 hours inclusive of all meal breaks.
2 RDO’s per week on a weekly roster.
4 RDO’s per fortnight on a fortnightly roster.
Whether working the weekly or fortnightly roster, employees must have two weekend days off in one fortnightly cycle.
Each two week cycle must include 2 consecutive days off
Monday to Friday. Minimum hours per day worked - 4 hrs, maximum 10 hours including supplementary hours.
Saturday to Sunday. Minimum hours per day worked 4 hrs, maximum 8 hours.
Minimum of a 10 hour break between the finish of ordinary hours on one day and the commencement of ordinary hours on the following day.
Overtime rates apply after maximum hours are worked in one day
Overtime rates apply when an RDO is worked.
Overtime to be paid at time and a half the loaded rate for first 3 hours, double the loaded time rate thereafter.
Public Holidays are to be paid at double the loaded time rate if worked.
The Loaded rate includes a loading to compensate for all allowances, therefore After Seven Allowance does not apply.

HGT/LHMU School Based Apprentice Collective Agreement
HGT have implemented a Collective Agreement to specifically apply to School Based apprentices and trainees. We have now received notification that the Hospitality Group Training/LHMU School Based Collective Agreement 2008-2011 has passed the no-disadvantage test. This means for current and prospective school based apprentices they will be covered by this agreement in place of the Hotels, Clubs NAPSA. Effeective from the 15 December 2008
The school based agreement is based on our collective agreement for all our employees either full or part time and has the same conditions such as penalties and overtime and was implemented to specifically cater for the school based training arrangements.
